An Evening with Trois Dames Brasserie

We are pleased to invite you to join the Caves team in welcoming our special guests Brasserie Trois Dames! Join us for an evening with these imaginative brewers, who will be bringing 7 top-notch draft brews, made with carefully selected fresh ingredients. The Trois Dames beers challenge the taste buds and flatter the eye, and that is exactly what makes them original.

Sainte Ni Touche – The basis for Sainte ni Touche is La Pasionaria Double IPA, a strong beer with a light sweetness balanced by an abundance of bittering and aromatic hops. After fermentation, the beer is transferred into used Chardonnay barrels. The barrel aging reduces the bitterness and covers the high alcohol content. The beer simultaneously becomes a bit lighter and more sour, making it more refreshing.

Vielle Saison – A saison style ale with Brettanomyces, brewed with abby malts and fermented in a wine foudre. Aged in Jerez barrels in our cellar with our house yeast for one year.

Foret Noire – La Forêt Noire is a reddish-black ale brewed with a mixture of malts (Carafa, Special B) which give it real body and depth – a color and texture reminiscent of chocolate torte. The beer is then blended with cherry wine and fermented cherries, resulting in a dark, roasty beer balanced by the fruity tartness of cherry.

La Tentation – a Tentation blends three different kinds of fermentation. It’s a saison recipe that is first fermented with Dupont yeast, followed by a second fermentation with a Belgian witbier yeast which has spent one year maturing in oak barrels. T he final part of the fermentation comes from wild yeasts from an orchard at the foot of the Jura Mountains. T he yeasts and bacteria found naturally on the skin of native Reinette Blanche apples, coupled with months of barrel aging gives La Tentation a very refreshing acidity.

Brettanomyces Saison – A saison fermented w/ Brettanomyces Lambicus & Brettanomyces Bruxellensis yeasts.

Trois Dames/Freigeist Kirsch Gose – Gose with cherries

Trois dames/Six Point Brewing Jalapeno Raspberry Dubbel – a double-ale-type Belgian beer with jalapenos and fermented raspberries. Medium sour. More sour citrus fruits, lemon, soft carbonation, light bodied, some chilli coming up in the sour finish.
